Pork Loin - any ideas?

Have defrosted a pork loin and can't make up my mind what to do with it.

All ideas welcome. I have the usual store cupboard faithfulls so can probably make most recipes!

You could stuff it with a mixture of fresh bread crumbs, finely chopped and fried onion and garlic, chopped chestnuts, parsley and sage, salt and pepper. Tie the pork steak together, sprinkle a little olive oil on it and roast it in alluminium foil for approx 30-40 minutes at 180 degrees.

If you preheat the oven at 200 degrees first, you can put some washed and salted potatoes in the oven on scewers for 20 minutes before you turn it down to 180 degrees to cook the loin of pork in the oven. That way they are ready at the same time.

Cut tomatoes in half, season with salt, pepper and herbs de provence, cover with bread crumbs and fry in a little olive oil on high heat for 5 minutes, open side down. Put them in the oven open side up for 40 minutes at 180 degrees.

Mix some crème fraîche with some parsley, cream cheese with chives and put a dollup of that on the potatoes when ready.

Slice the meat with the stuffing, add two half tomatoes per person and a baked potatoe with a dollup of the crème fraîche mixture, glass of cold Sauvignon blanc et voilà.

Tinned toms ,tom puree,garlic ,onion ,some hot spice whichever one you like one of the 3-4 red ones ,b lend in mixer ,cover the joint and roast ,time depends on size of joint ,test with a skewer ,yummy makes a nice change .

Well Irena, it's already been 9 days since you posted your question, but what did you do in the end with your loin of pork?

I made a 'rub' of different spices and flour that I had in the cupboard and cut the pork loin into medallions, dipped it into the flour mix and fried for 4 mins each side. Served with mushroom sauce, mash and salad.

I have bought another loin today and will use the slow cooker tomorrow to cook it in tomatoes, garlic and onions.

The recipe i gave must be roasted in the oven or you wont get the baked outside it gives .
