A few are developing seed heads
wonder if its best to leave or dig up and freeze

If the seed head keeps developing the leeks will become woody so it would be best to dig them up. Trim the top and root and wrap well, they will keep okay in the fridge for a few weeks.
Otherwise clean and slice the leeks, blanch them for a couple of minutes, put them into a colander and run cold water on them till they cool. Drain well and freeze in appropriate portions in freezer grade plastic bags. They can be used from frozen when required.
